Understanding the “danger zone”
The so-called “danger zone” refers to the temperature range between 4°C (40°F) and 60°C (140°F).
In this range, bacteria such as Salmonella, E. coli, and Staphylococcus aureus can multiply very quickly, doubling their numbers approximately every 20 minutes under optimal conditions.
Therefore, the risk for cooked meat increases if it remains in this range for too long.
